I’m single, I live alone and every other day I make myself one perfect, pancake… from scratch. I love pancakes. They remind me of lazy days off, celebrating, happiness, etc. And it doesn’t take as long as you would think. I pull everything I need out of the refrigerator, measure the dry ingredients, measure the wet ingredients, and then mix the two together… like Mom showed me when I was little. The recipe is just for one. There is never anything left over, just the perfect amount for one.

I use chick pea flour because it has protein in it, which helps build the muscles I am working on in yoga and I throw in a little brown rice flour to make it light and fluffy. Sometimes, I add a cooked little brown rice to sustain my energy throughout the morning. You can’t even tell the brown rice is in there. Sometime, I add fresh blueberries – I just drop them one by one, onto the wet side of the pancake, as its cooking… like my grandma used to do. Sometimes, to make it even more perfect, I will put chopped almonds on top and drizzle on agave syrup, which is like maple, but better for your blood sugar.

The reason I’m sharing this is that some people don’t like cooking for themselves, which is sad. For, how can we nourish others if we cannot feed ourselves? Single people especially say “Oh, I don’t like cooking just for me.” Well, really?… who better to cook for? You are important! Once we learn to feed ourselves physically, emotionally, spiritually we are then able to be truly present and happy in our own lives. Only, then can we begin to build the deep reservoir needed to drawn on to take care of others. And it doesn’t have to be pancakes. Whatever you love to eat, make it for yourself. Pancakes are only good for one day, that’s why I only make one at a time. Other food I make in big batches and put in single sized containers. If you like pancakes, here is my recipe:

One Perfect Pancake

1/2 c chick pea flour

2 Tbsp brown rice flour

1/2 tsp baking powder

1/2 tsp milled flaxseed (optional)

1/2 c almond milk

1 tsp oil

1 egg white

 

Mix, fry and enjoy!
